    Default Souffle Omelette with Mushrooms Recipe

    For the Omelette:
    Eggs - 4
    Pepper to taste
    Chives - 1 tsp, chopped
    Olive Oil - 2 tblsp
    Salt as per taste

    For the Mushroom Sauce:
    Button Mushrooms - 1 cup, cut into rounds
    Flour - 1 tblsp
    Salt as per taste
    Pepper as required
    Milk - 1/2 cup
    Oil - 1 tsp

    1. Heat one tsp of oil and fry the mushroom rings for 2 minutes or until the water has almost evaporated.
    2. Mix the flour and the milk in a mixing bowl and add 1 tbsp of water and salt and pepper to it.
    3. Pour this mixture into the mushrooms and cook gently over low heat stirring all the time for 1 minute.
    4. Remove and keep warm.
    5. Meanwhile, heat the oil in a non-stick pan and add the egg mixture to prepare an omelette.
    6. Cook the omelette on both sides and then slide into a place.
    7. Pour the sauce over and cover with one side of the omelette.
    8. Serve.
